Hearty Spanish Style Veggie Stew





Hearty Spanish style veggie stew.

Great for vegans and vegetarians.

My 2 and 4 year old sons both loved this.

So good!!


Ingredients -
50g Baby carrot, chopped
65g White onion, diced
590 White (Idaho) potato, cubed
14.5 Swanson's veggie broth
4oz Stem & pieces canned mushrooms
2 cup deluxe stir fry, frozen
60g lime, squeezed
10 oz finely diced canned tomatoes
1 Tablespoons ranch mix, powder
1Tablespoons taco seasoning, powder
3Tablespoon butter
1 teaspoon olive oil
salt
pepper
Celery Salt
1/4 cup cilantro, chopped
1 1/2 cups water


Directions -

Melt butter in a stock pot, add in olive oil. Mix in carrot, onion, potato and salt and pepper and celery salt. Saute until onions are transparent.
Add in veggie broth, mushrooms, tomatoes, frozen stir fry,
Mix in the ranch mix and the taco seasoning. 
Let simmer for about 20 minutes. Add the water and squeeze the lime.
Let simmer about 30 additional minutes.

Prep time 20 minutes
Cook time 50 minutes
Serves 6

Meatless Dirty Rice



Hearty dirty rice.

Good for vegetarians and vegans alike!

Ingredients -
Half pack of Yves Meatless Ground
1 cup 5 minute brown rice
2 tablespoons Worcestershire sauce
1/4 cup white onion, chopped
1/4 cup green bell pepper, chopped
2 teaspoons McCormick Cajun seasoning
salt
pepper
5 stalks asparagus diced
4 tablespoons unsalted sweet cream butter, divided in half
1 small can of mushrooms
1/2 can small diced tomatoes


Directions -
Melt 2 tablespoons butter in a sauce pan. Add the mushrooms, onions, pepper, asparagus and saute until the onions are transparent. Add salt, pepper, Cajun seasoning, Worcestershire sauce, meatless ground and tomatoes.
Stir and heat until well mixed. Spoon mixture into a dish. Set aside.

Melt butter in a skillet. Add brown rice to toast. Stir frequently as not to burn. Ad a dash of salt and some pepper. Slowly add in 2 cups of water a little at a time. Wait until the water has cooked out before you add more.

When the rice is done to taste stir in the veggie and meatless mixture.
Remove from heat and serve.

Mexican Stew With Shrimp

Hearty good thick stew.

Leave out the shrimp and it is vegetarian!

Prep time is only about 10-15 minutes.

Cook time is 30 minutes! :)

Ingredients -

14.5 ounce can of fire roasted tomatoes
6.5 ounces canned stems and pieces mushrooms
215 grams (2 medium) Potatoes, cut into 1-1.5 inch cubes
105 grams (1 small) yellow squash, chunky chopped
60 grams (1/4 medium) green bell pepper, chopped
50 grams (1/4 small) white onion, chopped
14.5 ounce can veggie broth
115 grams (1/2 cup) green cabbage, chopped
1 tablespoon olive oil
pinch of red pepper flakes (add more if you want more heat)
1 tablespoon taco seasoning
salt to taste
black pepper to taste
1 cup of water
100 grams (10-12 medium) cooked frozen shrimp (leave out if making vegetarian style)

Directions -

In a large pot heat olive oil. Add all the chopped veggies. Stir to coat well.
Add salt, pepper, taco seasoning, and red pepper flakes. Stir well.
Add veggie stock, tomatoes, and mushrooms.
Cook until the potatoes are fork tender.
Add shrimp remove from heat and cover.
Let stand for 5 minutes.

Serves 4.









Vegitarian Mexican Dirty Rice.


1 cup 5 minute rice
2 tablespoons butter
1/4 pack of Yves meatless ground
1/8 cup chopped green bell pepper
1/8 chopped white onion
1 ounce cream cheese
1 tsp ground cumin
black pepper
salt
1 tablespoon olive oil


Add meat, onions, bell pepper to frying pan.
Mix in cumin and pepper and salt.
Cook until hot through out.
Set aside.

Melt butter in a frying pan, Add rice, stir until brown.
Add water a little at a time. Add salt and pepper to taste.
Wait until a the water is cooked out before adding more.

Mix 'meat' mixture in with rice over low heat.
Add cream cheese.
Stir until cheese is well blended.

Split Stuffed Pablano Peppers



Stuffed Pablano peppers


1 cup 5 minute white rice
1/2 onion
2 tablespoons butter
1/8 cup cilantro
1/8 block cream cheese
1 roma tomato
salt 
pepper

2 large Pablano pepper
8 thin slices of mozzarella cheese
1 cup sliced mushrooms

Melt butter in a frying pan. Add uncooked rice. Stir frequntly until brown.
Add salt and pepper to taste. Add a little water at a time until done.
Let water cook out completely before you add more.
Add all veggies (not mushrooms) and cream cheese.
Mix and set aside.

Cut the two peppers in half length ways.
De-seed and rinse. 
Spoon in filling.
Add mushrooms on top of filling.
Layer cheese on top of mushrooms.

Bake in oven at 350F until cheese is melted.

Serves 4
Serve with salsa.


Veggie Stir Fry With Shrimp And Rice



Rice -
1 cup 5 minute white rice
2 tablespoons of butter
salt
pepper
1 1/2 cups water

Melt butter in a frying pan. Add uncooked rice. Stir frequently until brown.
Add salt and pepper to taste. Add water a little at a time until done.
Let water cook completely out before you add more.
Set aside.

Stir Fry With Shrimp
10-12 frozen, cooked peeled shrimp - thawed
5 stalks of fresh asparagus cut into one inch blocks
5 leaves of bok choy cut in strips
Half a can of baby corn
1/2 cup chopped mushrooms
1/4 cup white onion
1/4 cup low sodium soy sauce
salt pepper
1/2 cup chopped snow peas
Tablespoon of olive oil
1 cup water

Heat olive oil. Add all veggies. Cook until soft, but still has a crunch.
About 10 minutes.
Add salt, pepper and soy sauce and water.
Let cook down some.
Add shrimp, cover and remove from heat.


Serve over white rice

New Things!

I recently came aware of these facts.


I weight nearly 300 pounds.


I have a 2 year old and a 4 year old(boys).


I have diabetes.


I have high blood pressure.


I have high cholesterol.

I got my wake up call last August (2011). I went to my doctor for a yearly check up. Turns out I needed a hysterectomy and my gall bladder removed. 
That was a trip!
Six months post op and I feel fabulous! 
Or I did until I realized that I cannot wear anything in my closet. None of my pants, skirts, shorts fit me anymore.
I do not want to have to buy new clothes again!


I have been a vegetarian for a little over a month now. I do still eat fish, so I guess that makes me a Pescetarian.




I love these things!
They have become an obsession for me. :)
